Tofu Lasagna Roll Ups

 

Yield: 4 servings (2 roll ups per serving)

 

 

8                         Lasagna noodles                                             8

10. 5 oz              Soft tofu                                                  300 g

1 c                      Mozzarella cheese, shredded                250 mL

1/3 c                   Parmesan cheese, grated                      75 mL

1                         Egg                                                         1

1 t                       Garlic, minced                                        5 mL

1 t                       Parsley flakes                                         5 mL

1_ c                   Spaghetti sauce                                      450 mL

2 T                      Parmesan cheese, grated                      30 mL

 

 

1.            Preheat oven at 175 ¡C (350 ¡F).

2.            In a large pot, cook lasagna noodles.  Rinse and soak cooked noodles with cold water.

3.            In a mixing bowl, mix together tofu, mozzarella, 75 mL (1/3 c) parmesan, egg, garlic, and parsley.

4.            Spread 200 mL (3/4 c) spaghetti sauce in bottom of 20 cm (8Ó) square baking dish.

5.            Spread 45 mL (3 T) tofu mixture on each lasagna noodle.  Roll up.  Place in baking dish with flap side down.

6.            Spread remaining spaghetti sauce on roll ups.  Cover baking dish.  Bake for 30 min.

7.            Sprinkle remaining parmesan cheese on cooked roll ups.  Bake uncovered for 10 min or until cheese begins to brown.
